You will need:
1 pork loin, roast, butt, etc........
1 can (15 oz) of diced tomatoes with chilies
1 packet of taco seasoning
Take a pork lion, roast, shoulder whatever is cheap and will fit in your crock pot (slow cooker), trim any large fat areas. Put it in the bottom of your crock pot. Put the taco seasoning on top of roast, then add tomatoes.
Turn on to low, let cook for 8-12 hours depending of size of roast and type of crock pot. when done take pork out in one large piece set in serving bowl. Proceed to shred the pork with 2 serving spoons. Strain what is left in the crock. Add strained tomato/taco seasoning mix into the pork to taste.
You can add cilantro to the finished mixture. You can add onions and peppers to the crock pot at the beginning if you like. You can also do this with chicken or beef.

So many ways to guide to a new horizon- but I'll start with a fun hint from a mamacita long ago. Mexican coke - dump it in.
If you really want to jump into carnitas land, head to a market that sells Manteca. Quite the unhealthy route though. |

Manteca (lard) is super easy to make yourself, and that way it's not as bad for you. No worse than butter, and will make things tastier.
Carnitas is good if you marinate it in orange juice too.
Put that in your taco and smoke it! |

Sounds like you've seen the homemade manteca in my freezer (Secret Weapon) - freaking madness from an organic smoked family sausage. And have put in the carnitas with the coke and citrus from my backyard tree.
Greatness~ though it's still not the straight super nasty lard they use in the taco shacks.

I'm having pork tacos tomorrow but I make my own marinade paste from anchos and guajillo chilis. I make my own corn tortillias too.
I can't fricken wait! |
