Amen on the brick pit...summer plan as well - as long as the leaky basement seal and remodeled bathroom (1 year of destruction down) pan out...freakin' houses.

Going tall/vertical...figure need to be able to hang 1 whole pig of sausage (Family sausage recipe) / racks, etc.

Steaks are salt / pepper period. I'll put all kinds of shit in rubs - love dried ground jalapeno - on anything and everything. I've got the back pocket recipes, but dang adventure is fun...and I have fucked up for sure.

Here's my rub:
Ingredients:

� � Cup Paprika
� � Cup Ground black pepper
� 2 Tbs Kosher salt
� 2 Tbs Chili powder
� 2 Tbs Garlic powder
� 2 Tbs Onion powder
� 2 tsp Cayenne pepper

Preparation Directions:
� Mix the spices thoroughly in a bowl. Store covered in a cool, dark pantry. Makes about 1 � cups.

Usually I add some dried smoked jalapenos to it as well.

I've been adding more Paprika lately, but mine's typically:

garlic powder, dried jalapeno, cayenne, salt & pepper - the jalapeno just gives more HOT than the peppery cayenne, but together it's up my alley.

If I'm rubbin' on some chicken I mix dried mustard into the rub.

But if I'm smokin some shit, it's always rubbed in butter now...roasts, briskets, chicken, etc...

I don't cook many ribs, because even low and slow I can never make it as good as the joint down the street- where it's cheaper to buy their rack than a raw one at the store.
