The whole "chicken wing" thread has got me jonesin' for some good dark meat recipes. I'm talkin' legs and thighs here. Here's my starter:
This one is EASY!
Ingredients:
8 chicken thighs.
1(one) 6 ounce bag of Spicy BBQ potato chips
1/2 cup melted butter.
Seasoning salt.
Methode:
Preheat oven to 400 degrees F.
Wash chicken and remove skin. Pat dry with towel. Line baking sheet with heavy foil and lightly grease it. In a plastic bag, place potato chips and mash to to fine crumbs. Remove to a bowl. Pour melted butter into a seperate bowl. Dredge chicken in butter and then coat with chip crumbs.
Place thighs on foil lined baking sheet, leaving a little space between each one. Sprinkle with a little bit of seasoning salt. Bake for 45 minutes, or until juices run clear and outside is nice and crispy.

Nope. Just not any ridged, rippled kind. Use the thin & crispy variety.... |
