I think I spelled that right....anyways.
Anyone have a any really good chicken quesidilla recipes??
I always use plain chopped chicken, flour tortillas, colby cheese, and Tostitos Hot cheese. They always turn out ok.
I kinda curious as to how you guys make them??

I'm insane about guacamole, but I like em with everything. The preshredded/seasoned Mexican Kraft (Or whatever) cheese is a good blend of cheeses that melt well.
The best ones I've made had steak, roasted/skinned aneheim chilis, and said cheese...with guacamole dumped on the sucker.
Also love em with Chorizo, eggs, cheese, chilis, etc.
Always cooked on the pizza stone w/ a bit of corn meal.
For years I tried finding the best guacamole recipe- I just don't like the shit with sour cream and salsa mixed in - no fake store shit. Final mix: A shitload of Avocados, Konrico (Just has the perfect blend of spices for Guac), a little lime, and the topper is the peppercini juice (From the jar). I keep it chunky and chow it down. |

I usually go crazy with these things.
Chicken Prep:
Use boneless, skinless chicken breasts
Cover both sides in lemon pepper, add a hint of garlic salt
cook in butter on stove top
Tortillas
Use a clean frying pan, brown one side, flip, then add:
Your choice of cheeses all over the tortilla
Refried beans, spread with spoon or similar tool over half of the tortilla
Spanish rice, Red Beans and Rice, or Jambalaya rice - spread over same half as beans
Tomatoes - chopped or diced - spread over same half
Romaine lettuce - chopped - spread over same half
Onion (your choice) - diced - spread over same half
Add chicken over half
Fold empty side of tortilla over filled half, press down with spatula, flip until both sides are brown.
Remove from pan, allow it to cool, cut in portions, serve with your choice of dipping ensembles (sour cream, guacamole, salsa, salsa con questo, etc.)
You can pretty much put anything inside of them, experiment some. |

There were already some good suggestions, so I won't try to top them, BUT:
You can save a ton of hassle by buying a rotisserie chicken and taking 2 minutes to shred it by hand. Only costs about 4 bucks and it's cooked and ready to go... and you'll have some leftover white meat to toss in a salad. |

That's so true. You can buy the whole cooked rotisserie chicken for less than a raw whole chicken. What gives with that shit. Safeway had a special - 2 chickens for about 4 bucks. I stocked the whole freezer the other day. Have a good BBQ place that sells whole smoked chix for $6.00. Damn good. |
